Intro:
This quick and easy caprese will transform your sandwich game and make all your flatmates jealous. The secret ingredient being the homemade pesto. Pesto is incredibly simple and tasty only requiring a handful of ingredients and it has many applications such as making your own fresh pesto pasta. That being said this recipe requires a food processor (I use a Nutri bullet) so keep one handy. Pesto can also be great for making dips or a base for pizza, or baked into bread, or even to dress salad with. The more you experiment the more your confidence will grow in the kitchen. With no cooking required (only chopping). You will definitely want to save this one for later.
Ingredients (1 sandwich):
- 2 slices sourdough
- 1 large tomato (try different types to switch it up!)
- 1 ball buffalo mozzarella
For Pesto:
- 2 cups fresh basil leaves
- 1/2 cup grated parmesan
- 1/3 cup pine nuts
- 3 cloves garlic- minced
- 1/4 tsp salt
- 1/8 tsp black pepper
Cooking instructions:
- To make the pesto remove the stalks from the basil, then add basil leaves and rest of ingredients to food processor and blitz very quickly (you want almost verging on a paste but not runny). Season to taste with S & P.
- Then drain the buffalo mozzarella and slice thinly.
- Slice tomato thinly.
- Slightly toast the bread
- Grab a slice of bread and spread a generous layer of pesto on before layering on your buffalo mozzarella followed by your tomato (don't forget to season tomatoes with salt and pepper slightly!)
- Place your other slice of toasted sourdough on your sandwich and enjoy!
