Honey Sriracha Shredded Chicken

Warming Chorizo & Tomato Stew

Intro:

You will quickly discover my love for the slow cooker and I would highly recommend making the investment as it allows you to create delicious meals with only a little preparation and practically no actual cooking! Just stick the ingredients in before you head into university or work for the day, and when you return your kitchen will be full of mouth watering aromas. This dish is especially nice as we get into winter, a bowl of this slightly spicy, incredibly warming chorizo stew will make you forget about your sodden clothes. This dish also goes great with a dollop of fresh homemade pesto on the top as the punchy herbs balance out the rich tomato and spicy chorizo (if interested see my Caprese recipe for a simple green pesto). However, if you wish to save some time shops have great pesto selections at a relatively cheap price. But don't take my word for it, give it a try and let me know what you think!

Ingredients (Serves 4): 

  • Chorizo (250g)- Sliced
  • 1 tin butter beans (400g)
  • 1 tin chopped tomatoes (400g)
  • Baby Potatoes (250g)- Quartered
  • 2 cloves garlic minced
  • 2 tbsp Tomato puree
  • 1 tsp Chilli Flakes
  • Vegetable stock (200ml)
  • (Optional) Crusty bread
  • (Optional) Green pesto

Cooking Instructions:


  1. Place all prepared ingredients into the slow cooker.
  2. Season slightly with salt and generously with pepper.
  3. Give it a big mix.
  4. Cook on high for 4 hours or low for 8 hours.
  5. Plate up and serve with crusty bread (optionally add a dollop of green pesto to finish), yep that's really it. Enjoy!
